Kitsune means a fox.
Soba is a kind of Japanese noodles,
made of buckwheat grain.

The floating square stuff is deep fried thinly sliced Tofu,
called Oage, boled in fish based stock
together with Soba and slices of spring onions.

Why fox?
Because foxes like Oage
in Japanese fairly tales,
and Kitsune became being called as Oage.
